Phase 1: Continuous fat analysis via digital camera system. Level of
fat-removal continually adjusted based on the camera’s findings. |

Phase 2: Separation of the lean meat and fat can be controlled either
by feedback from the camera or by manual adjustment of the
+/- setting in the programme.
Phase 3: Derinding of the fat-layer by means of Weber’s proven derinding
technology.
Phase 4: Lean meat, fat and rind sorted onto 3 separate out-feed conveyors.
Entire system constructed from stainless steel with a long lasting, low maintenance, hygienic design –
just as you would expect from a Weber derinder. |
